Exposure and Terroir:
Stony soil. Grapes that require full south-facing exposure. The cuvée is made from a selection of plots of old vines over forty years old.

Winemaking:
Hand-harvested grapes in 8 kg crates, not destemmed, undergo carbonic maceration for three weeks (the grapes are not pressed, and are placed whole in the tank, with fermentation occurring within the berry). Frequent punchdowns for ten days. The blend is only made after about ten months in tank.

Aging Potential:
Drink now or within 5/6 years.

Food Pairing:
This cuvée expresses itself with sumptuousness and depth. Due to its power on the palate and the finesse of its tannins, it pairs perfectly with festive dishes such as stuffed capon, lamb rack with black tapenade, or a cheese platter.
